Cherry & Oak’s signature dish is their 12-hour smoked brisket which features a robust beefy flavour with smoky notes infused with cherry and oak wood. After being smoked for 12 hours, the fatty, ‘point end’ of the brisket which faces the fire of the smoker’s firebox usually becomes burnt. But nothing goes to waste at Cherry & Oak, as these ends get cut into cubes, soaked with sauce and then returned to the smoker till it is well-caramelised. What results is Burnt Ends ($29) - an intense flavour bomb with contrasting textures that is crunchy on the outside and juicy on the inside.
